Chocolate mousse with Fin du Monde beer




The mixture of chocolate and beer may seem surprising to you, but know that these two ingredients go wonderfully together! Recipe for 4 servings.

Preparation time: 20 minutes (to be prepared the same day)

 

 



Accessories:

 

  • Bowl or cul-de-poule

  • Hand whisk

 

Ingredients:

 

  • 300 g Cacao Barry semi-bitter chocolate 58% cocoa pastilles*

  • 240 ml End of the World Beer from Unibroue

  • 30 ml Corn Syrup

 

Preparation:

 

  1. Place the chocolate in a bowl, preferably a stainless steel mixing bowl;

  2. Bring the beer and corn syrup to a boil for a few seconds (in the microwave or in a small saucepan on the stove);

  3. Pour over the chocolate and mix with a hand whisk to obtain a uniform texture;

  4. Then put in the refrigerator for about 15 minutes, until the mixture thickens around and is liquid and cooled in the center;

  5. Whip the cooled mixture with a hand whisk until it thickens slightly;

  6. Pour immediately into small dishes or ramekins, cool for 10 minutes and serve.

 

Variants

 

Fruity mousse: Replace Fin du Monde beer with a fruity beer like Ephémère Cerise (Unibroue).

Softer and creamier foam: Replace 50 ml of beer with 50 ml of 35% cream
