Recipe: Traditional Guanaja Hot Chocolate

A creation of the École du Grand Chocolat Valrhona






Makes 2 cups of delicious hot chocolate with the unique taste of Guanaja chocolate

 

 

Required accessories:

 

  • Bowl

  • Hand whisk

 

Ingredients :

 

  • 425 g of whole milk

  • 90 g of Guanaja Chocolate* with 70% cocoa

  • Cocoa powder for decoration*

 

Preparation :

 

  1. Melt the chocolate in the microwave (50%) or in a bain-marie

  2. Boil the milk in a saucepan.

  3. Pour 1/3 of the boiling milk over the chocolate to obtain a smooth, elastic and shiny texture, then pour the rest, taking care to maintain this texture.

  4. Return the chocolate to the saucepan and heat, whisking vigorously, to obtain a nice light and creamy mousse.

  5. Serve in cups and sprinkle with cocoa powder
