Recipe: Goat cheese and raspberry cups

An original and quick dessert to prepare which makes 12 small cups






Preparation: 5 minutes



Required accessories:

 

  • Bowl

  • Hand whisk

  • Pastry bag

 

Ingredients:

 

  • 115 g of soft, unripened goat cheese (Chèvre des Alpes)

  • 55 g frozen raspberries

  • 45 g of white fondant *

  • 45 g of white chocolate in pastilles *

  • 12 small medium-sized extra-bitter chocolate port cups *

 

Preparation:

 

  1. Gently melt the white chocolate in the microwave (medium) or bain-marie;

  2. Defrost the raspberries and let cool if necessary

  3. Whisk together the goat cheese with the warm raspberries;

  4. Lightly warm the fondant in the microwave to soften it and add to the mixture;

  5. Stir in warm melted white chocolate;

  6. Using a pastry bag, fill the cups with the mixture;

  7. Refrigerate for an hour and serve.

  8. Decorate each cut with a raspberry

 

Variant:

 

Replace the goat cheese with cream cheese .
